What a drifting price records

A drift is always relative to an earlier observation, so record both prices and their timestamps. ‘The odds drifted’ is incomplete without naming the operator or exchange, market, event and settlement rules. A price may move on one feed while another remains unchanged. In a low-liquidity market, a modest order can produce a visible move that would be negligible elsewhere.

Convert both quotes to implied probability to describe the scale consistently. The 2.00 to 2.40 example is an 8.33 percentage-point fall in price-implied probability, not an 8.33% guarantee of anything about the event.

Common explanations and their limits

Possible causes include team news, withdrawals, line-up information, model updates, liability management, exchange orders or a correction after an opening price. Several can operate together. Public observers usually cannot see the full order book or a bookmaker’s internal liabilities, so assigning a single cause without a cited announcement is speculation.
